“I’m In The Mood For A Liquid Indio”

This weekend I was inspired to create a desert cocktail in honor of one of the greatest music festivals in the world.  Coachella is here again and this year’s headliners are Lady Gaga, Radiohead, and Kendrick Lamar.  

If you can’t make it out there, you can still enjoy the greatest amalgamation of performers right in your own backyard while Coachella streams live on YouTube…both weekends.  So bring the desert home with three perfect ingredients that capture the essence of coachella in one drink — Here the desert meets art meets music in my new creation, The Liquid Indio.

THE LIQUID INDIO

2 oz. cactus infused tequila

1/2 oz. sage infused honey syrup

3/4 oz. lime juice

3 dried barhi dates 

1 oz. fresh pink grapefruit juice

Garnish-orange poppies

Honey Syrup

3 parts honey to one part water, add in 8 sage leaves and bring to a boil until the water dissolves into the honey. Turn off heat and let it sit for an hour and strain into a bottle.

Cactus Tequila

Chop up three large young fresh cactus leaves and place in an airtight bottle with one bottle of 123 tequila reposado.

Muddle everything except the tequila and then add the tequila and ice. Shake and strain into a rocks glass over ice and garnish with the poppies.
